A tartine is a French, open-faced sandwich. You can use any toppings you like, but as it's the most flavourful time of the year in our garden, we can't resist a yummy tomato tartine with whipped feta. The sad thing is that we can't eat plain old grocery store tomatoes after this...
Serves 4 Prep time 15 mins
Ingredients:
2oz cream cheese 5oz feta 1/2 cup olive oil 2 tbsp lemon juice
salt & pepper to taste good quality rustic bread, sliced 4-6 heirloom tomatoes
4 ripe plums, halved cilantro lemon olive oil Directions:
In a small blender, add both cheeses, 1/3 cup olive oil, lemon juice and s&p. Blend until smooth. Set aside. Heat grill pan to med high and brush lightly with oil. Add plums and grill until heated through about 3 mins. Remove from pan and set aside. Wipe out pan and reheat on med high heat.
Lightly brush both sides of bread with remaining olive oil. In the grill pan, grill bread until heated and lightly toasted. Remove from heat and assemble tartines. Spread cheese mixture onto bread, then top with a mixture of sliced tomatoes and plums. Finish with a light drizzle of lemon olive oil, S&P, and cilantro leaves. Enjoy XX 2DA
