Kale Caesar Salad

We've voted. This delicious kale salad wins hands down vs the traditional romaine version. The dressing softens the kale and it really is delicious. It is perfect for lunch or dinner, and to make it a complete meal simply add some baked falafel, shrimp, or grilled meat. It's a perfect salad that will make your meal shine!



Dressing: makes enough for 2 large salads


Kale Caesar Salad

  • 1 head of kale, ribbed and chopped into bite-sized pieces

For the Dressing

  • 1/4 cup red wine vinegar

  • 2 tbsp lemon juice

  • 6 tbsp mayonnaise

  • 2 tsp Dijon mustard

  • 1/2 cup packed grated parmesan cheese, plus extra for garnish

  • 1 clove garlic

  • 1 cup olive oil

  • 1/2 tsp fine sea salt

  • 1 1/2 tsp freshly ground black pepper

For the Croutons

  • 2 slices of bread, torn into bite-sized pieces

  • 2 tbsp olive oil

  • Salt & pepper


Chop kale and place into a large bowl.

Place all dressing ingredients in a blender or food processor and blend until completely smooth.

Meanwhile, add 2 tbsp olive oil to a frying pan over med-high heat. Once hot, add torn bread and season with salt and pepper. Fry until golden brown on both sides.

Add half* the dressing to the kale and toss well. Let it sit for 10 plus minutes as the dressing helps soften the kale. Right before serving, add croutons, and garnish with extra parmesean shavings.


*The dressing makes enough for two large salads. Extra dressing can be stored in a mason jar in the fridge for up to 1 week. If the mixture separates, place in blender and whizz it up again!
