Baked Salmon with Mango Salsa

The sun is shining and it's heating up here in Ontario! Break out the margaritas, turn on the tunes and set up a little fiesta. (Did you know, we are totally into themed dinners?) This Mexican inspired salmon dish is super easy and really delicious. You just need one special spice, Tajin. It's a chili pepper seasoning mixed with salt and lime. You can find it at most grocers and it's delicious on so many things!



Serves 4

Ingredients:

  • 1 1/2 lb salmon filet, skin on

  • 1 Tbsp olive oil

  • 1/2 tbsp Tajin

  • 1/4 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp sea salt

For the Salsa:

  • 1 diced mango

  • 1/4 cup diced red onion

  • handful cherry tomatoes, quartered

  • 1 14oz can black beans, rinsed

  • 1 jalapeno, diced

  • 1 lime, juiced

  • s&p to taste

For the Topping:

  • 1 diced avocado

  • 1/4 cup cilantro, chopped


Directions:


Preheat oven to 400°.

Place salmon on a baking dish and brush with olive oil. Sprinkle with Tajin, cumin, garlic and salt. Bake in oven for approx. 20 mins until flaky.


Make salsa: Add all ingredients to a medium bowl, mix together and top with lime juice. Add s&p to taste and set aside.


Serve on a platter topped with the salsa, avocado and cilantro.
