Healthy Breakfast Cookies

The perfect way to start your day or for that 3:00 pm pick-me-up. This is basically an 'everything you eat in breakfast form' type of cookie, so totally guilt-free... right?

Packed with grains and seeds, we are making them over and over again in the 2DA kitchen.

Oh! Another great thing about this one is you can use any nuts and seeds you have on hand... who doesn't love a versatile cookie?!

Ingredients:

  • 1 1/4 cups rolled oats

  • 1/4 cups almond flour

  • 1/2 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 1/4 cup chopped almonds

  • 1/4 cup chopped dried fruit, such as dates, apricots, or cranberries

  • 1/4 cup hemp hearts

  • 1/2 cup chocolate chips

  • 3 tbsp chia seeds

  • 1 tbsp cinnamon

  • 1/2 cup maple syrup

  • 1/3 cup nut butter

  • 1 tsp vanilla extract

  • 1 large egg

Directions:


  • Preheat oven to 350°F, line two baking sheets with silicone baking mats or parchment paper

  • Mix all dry ingredients together in a medium-sized bowl

  • Mix all wet ingredients in a large bowl, until smooth

  • Slowly incorporate dry mixture into wet

  • With a 1/4 measuring cup, scoop batter out, and place onto baking sheet. Using the flat side of the scoop, gently press the disc down to shape*

  • Bake for 14-18 minutes or until bottoms begin to brown

  • Let cool on baking sheet for 10 minutes

  • Don't eat them all too quickly, but if you do, they aren't hard to make again!


*note, cookies will not spread significantly during baking process, so you must shape them before baking.
