Pizza with Pear, Blue Cheese, Prosciutto and Lavender Honey

The combination of the pear, blue cheese and lavender honey, mixed with fresh thyme is a flavour explosion.

This pizza has no sauce, but it doesn’t need it, trust us.

This is a fantastic lunch, dinner or even appetizer. Serve it with a bright, peppery arugula salad (that we have been known to add directly on top of the pizza) or slice it in small squares and serve it as bite-sized appetizers. Tip, reheating this the next day makes the crust even crispier and the flavours explode. The highlight of this pizza is the drizzled lavender honey… thankfully Purple Hills Lavender Farm is right around the corner so we have an endless supply!

Gotta go, a hot one is just coming out of the oven.



Makes 2- 12” pizzas


Ingredients:


1 bag pizza dough

1 med onion, sliced

2 tbsp olive oil

fresh thyme

s&p

1 cup shredded Mozzarella

1/4 cup crumbled blue cheese

8 slices prosciutto, thinly sliced

1 pear, thinly sliced

2 tbsp lavender honey


Directions:


Heat oven to 450° with pizza pans inside.

Sauté sliced onion in 1 tbsp olive oil on med heat until very soft and caramelized, about 10 mins.

Meanwhile, separate dough into 2 rounds. Roll out dough halves onto a floured surface until very thin and shape into 2 circles about 12" in diameter.

Once dough is ready and pans are heated, remove pans from oven and place rolled out dough onto the pans.

Top each pizza with 1/2 tbsp each of olive oil, fresh thyme and s&p.

Sprinkle with the cheeses and sliced prosciutto. Arrange the top with the sliced pear.

Bake for about 10-15 mins until the crust is golden and the cheeses are bubbling.

Once out of the oven, drizzle each pizza with a tbsp of lavender honey.
