Can you say easy? This lasagna recipe is on the table in just about 45 minutes and it's a simple way to enjoy a meal that would usually take hours! Can you say delicious? With all of the same flavours, cheesiness, and crispness of a regular lasagna, this recipe is not one to be missed. Designed with full houses in mind, it is the perfect meal for when all of your loved ones arrive home and you'd rather spend time with them than in the kitchen. P.S try not to eat it all in one day because it is even better the next!
1/2 box lasagna noodles, broken into 3 pieces
1 medium onion, diced
1 bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
1 tsp salt
1/2 tsp ground pepper
1/2 tbsp dried oregano
1/2 tsp chili flakes
2 1/4 cup good quality crushed tomatoes
1/4 cup red wine
1/2 cup milk
1/2 cup of ricotta
320 g mozzarella, shredded

Preheat oven to 375 ° F
In a large pot of boiling water add broken lasagna noodles and cook until very al dente (about 6 mins). The noodles will continue to cook later so do not cook them all the way.
Meanwhile, in a large cast-iron pan on medium-high heat, add diced onion and cook until they start to sweat. Add diced bell pepper and sauté for about 3 mins. Add garlic and stir into vegetables.
Add ground beef and cook until no longer pink, stirring frequently. Mix in salt, pepper, oregano, chili flakes.
Once beef is fully cooked, add tomatoes, red wine, and milk. Simmer approx 15 minutes to thicken.
Add the drained lasagna noodles into the sauce and cover them with the sauce.
Distribute ricotta in the pan then top the entire pan with shredded mozzarella.
Place pan in the oven and cook for 10-15 minutes until the cheese is melted and lightly browned.
