Chia Seed Pudding

Good morning! The sun is shining, the snow is sparkling; it looks to be the start of a stellar day. Before we get outside and hit the slopes, we wanted to share this super easy, nutritious pudding with you all. It literally takes 5 minutes to make. Pop it in the fridge for a couple of hours and you’ll have a healthy snack or dessert this afternoon! This lasts about 4-5 days in the fridge, if you don’t eat it all before. Chia really is a superfood. It contains fibre, protein, omega 3s, multiple vitamins and has little calories. Cool fact, it’s derived from a mint plant.



The yummy thing about this pudding is you can really change up the flavours. We’ve included chocolate chia and banana chia below, but feel free to use your imagination. Blueberry, pineapple, peanut butter, the sky is the limit! Also, any liquid will do. We use oat milk, but you can use regular milk, coconut, almond, plain yogurt, even juices.

A little goes a long way. Chia pudding is quite filling so choose smaller jars or bowls when serving. We like to make a layered parfait. Start with a layer of pudding, top with toasted nuts, add another layer of pudding and top with fresh berries and more nuts.



Ingredients:


Chia Pudding:

1 cup of milk (your choice)

1/4 cup of chia seeds

1 tbsp maple syrup

Additional Flavour Variations:


Chocolate Chia Pudding:

2 tbsp cocoa powder

1/2 tsp cinnamon

1 cup of milk (your choice)

1/4 cup of chia seeds

1 tbsp maple syrup


Banana Chia Pudding:

1/2 mashed banana

1 cup of milk (your choice)

1/4 cup of chia seeds

1 tbsp maple syrup


Directions:


Mix all ingredients together and cover. Keep in fridge for 4+ hours, preferably overnight.


Toppings:

Berries, sliced bananas, toasted nuts, banana chips, cocoa nibs, etc!
