This is the prettiest salad we’ve ever made, it was hard to toss it all together and mess it up, but the dressing is so good you just have to do it. If you don’t have a glass trifle bowl, just use a salad bowl and forget the layering!
Use whatever colourful ingredients you have on hand for your layers.

Kale, julienned yellow peppers, black bean noodles, red cabbage, spiraled zucchini, heirloom tomatoes, topped off with roasted chickpeas and sliced scallions. That’s about 7, right?
1/4 cup tahini
1/4 cup warm water
1/4 cup rice vinegar
2 tbsp miso paste
2 tbsp soy sauce
1 tsp sesame oil
1 tsp minced ginger
Place all dressing ingredients in a mason jar and shake vigorously.
Tip: If using kale, pour a little dressing onto kale and massage gently to soften before adding it to your layers.
