Explosion of Love Pie

The title says it all. This is the perfect pie for Valentine's Day or really anyyyytime! Who needs a card or chocolate when you can gift this.

Made with strawberry, cranberry, and orange, this slab pie is everything you need to show the love.

Method:

Using the recipe above, cut 3/4 off of the large dough ball.

Grease a 9x12 inch baking sheet

Roll out the larger ball of dough into a large rectangle

Place dough onto baking sheet , pressing down into the sides of sheet pan with leaving some dough overhanging.

Trim the overhanging dough and roll and save with the leftover dough.

Poke holes with a fork in the bottom of the pie crust, then set aside and chill

Roll out extra dough and cut into hearts of varying sizes (we cut them by hand but you could use a cookie cutter), place cut hearts on a separate plate and chill while you make the filling


To make the filling:

Combine 4 cups strawberries and 2 cups cranberries in a heavy-bottomed pot

On med-high add sugar, orange juice, and orange zest, stir to combine

Once mixture begins to break down, add cornstarch and stir to combine (this will thicken up the compote)

Cook for approx 15 minutes until cranberries burst and the mixture has thickened (time will change if using fresh fruit, not frozen)

Cool this mixture fully, refrigerate for approx 40 minutes


Assemble the pie:

Pour chilled filling into pie crust, spread so mixture is even

Top with cut hearts, starting at the bottom with many and working your way up placing less and less as you go.

Brush crust with beaten egg and sprinkle sugar over top

Bake at 375° F for 45 mins or until crust is golden and filling is bubbly
