Smash Burgers

When your bbq is covered in snow, this is the next best thing… actually we think it might be even better! Thin, diner-style burgers pressed down to create a crispy outside but still juicy middle. And can we talk about that bun? Toasted and squishy, it brings this burger to new heights (or low!). We use a brioche bun but a potato bun also works wonders.

The key to a great smash burger is the heat. Use a cast iron pan on med-high heat, and cook for a couple of minutes, flip, add the cheese... voila, a shaggy, delicious smash burger!


Ingredients:


1 lb med ground beef salt and pepper

sliced cheddar cheese

4 brioche buns 2 tbsp butter


Special Sauce: 4 tbsp mayonnaise

2 tbsp ketchup

1 1/2 tbsp diced dill pickles

1 tsp pickle juice

pinch sugar

Toppings:

pickles, red onion, shredded lettuce, tomato (in season)


Directions:


Heat a cast iron pan on med-high heat. Heat another frying pan on med heat. Form ground beef into 4 very loosely packed balls. Season outside of patties with salt and pepper.

Butter insides of buns. Add meat to cast iron pan and with a large spatula, press down patties until very thin. Fry, without flipping, for about two minutes until almost cooked through. You want the edges to be crispy and brown. Add buns, buttered side down, to second pan. Flip burgers, being careful to scrape up the browned pieces and add sliced cheese. Put a lid on the pan to help melt the cheese more quickly.

Remove patties from pan, place them on toasted side of bun leaving them in the pan, close the bun and lightly press the tops of bun with back of spatula. This gets it coated in a little more butter and flavour. Top with special sauce and your favourite burger toppings.
