The perfect way to start a New Year (especially this one) is with these easy and delicious Cranberry Brie Bites. Made with store bought puff pastry, it doesn't get easier than this. Make a quick cranberry sauce, cut some brie, roll out your dough and voila! Everyone will thank you for making this, that is if you don't east them all first.

Ingredients:
Cranberry Filling:
2 cups fresh cranberries
6 tbsp orange juice
4 tbsp water
2 tbsp maple syrup
1/2 tsp ground cinnamon
1/2 tsp kosher salt
For the Puff Pastry Bites:
2 sheets puff pastry (store-bought or homemade)
300 grams Brie cheese, cold
Instructions:
Spray a mini muffin pan with cooking spray.
Preheat oven to 400° F
Make the cranberry sauce. Combine cranberries, orange juice, water, maple syrup, cinnamon, and salt in a small saucepan over medium heat. Bring to a boil then simmer until mixture thickens. Let cool.
Roll 1 puff pastry sheet into a 10x14 inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
Cut cheese into 24 pieces approximately 3/4-inch in size. Press in 1 piece of cheese and top with 1 teaspoon of cranberry sauce.
Bake bites in the preheated oven until golden brown, 18 to 20 minutes.
