Baked Tofu and Zucchini

Take a break from the bbq! Our garden is overflowing with zucchini so what better way to enjoy it. (Other than our chocolate zucchini loaf). Shred zucchini and lightly sauté it with kale, garlic and a squeeze of lemon. Add baked tofu, some toasted pine nuts and a super yummy lemony tahini dressing.



To bake tofu:

Cube tofu and toss with olive oil, s&p and bake at 400 for 40 mins.


Dressing:

1 tbsp olive oil

4 tbsp tahini

2 tbsp lemon juice

2 tsp maple syrup

1 tsp soy sauce

1 tsp tumeric

S&P

Water to thin.

Mix well in a blender.


Drizzle over sautéed veg and baked tofu and top with pine nuts.
