We can't get enough of fall desserts and this does not disappoint! Use this as the grande finale for your Thanksgiving dinner, or really anytime. We served it for Tessa's 17th Birthday and there were no crumbs left. And did we mention Cream Cheese Icing? Seriously the best. Lick the bowl clean the best. We don't love icing that is cloyingly sweet and we think this compliments this spice cake perfectly. This recipe makes 2- 8"cakes to be stacked. You can always half the recipe and make one pan but then you'll have less, and that's a sad thing. Happy Baking.
INGREDIENTS
Cake
3 c. all-purpose flour, levelled
2 1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground allspice
1 tsp. Kosher salt
1 tsp. baking soda
1 c. packed light brown sugar
1/2 c. granulated sugar
3Â large eggs
3/4 c. canola oil
3/4 c. unsweetened pumpkin purée
1 tsp. pure vanilla extract
4 c. diced peeled apples, 2 large apples
Cream Cheese Icing
1/2 c. (1 stick) unsalted butter at room temperature
3/4 c. sugar
8 oz. cream cheese, softened
1 tsp. pure vanilla extract
1/2 tsp. salt
4 c. icing sugar
DIRECTIONS
Preheat oven to 350°F. Grease 2 (8-inch) round cake pans and line bottoms with parchment.
Whisk together flour, cinnamon, salt, baking soda, nutmeg, and allspice in a bowl. Beat sugars, eggs, oil, pumpkin, and vanilla with an electric mixer on medium speed until combined, about 1 minute. Set mixer speed to low and slowly add flour mixture, scraping down sides of the bowl as needed. Fold in apples. Divide batter among prepared pans. Bake until a toothpick inserted in centre comes out clean, 35 minutes. Cool cakes on wire racks to let cool completely.
Make icing: Combine butter and cream cheese in a bowl and beat with mixer until creamy, well-combined, and no lumps. Add vanilla extract and salt and mix well to combine.
With mixer on low, gradually add powdered sugar until completely combined.
Place one cake layer on a cake stand or serving platter and top with 3/4 cup of the icing. Repeat with top layer. Frost sides with remaining icing.
